Add cider and you're on to a winner. For this recipe you will need a small bundt tin 21cm/8¼in in diameter. The key to making this look like a pumpkin is to use a tin with vertical segments, not with a twist.By Emily Angle Sharethis recipe Add to favourites Send to mobile Shopping list Print recipeIngredientsFor the pumpkin purée1 small pumpkin or squash (such as onion, crown prince and kabocha)For the cakebutter, for greasing250g/9oz light brown sugar300g/10½oz pumpkin purée100ml/3½fl oz medium dry cider100ml/3½fl oz vegetable oil2 large free-range eggs250g/9oz plain flour½ tsp salt2 tsp baking powder1 tsp bicarbonate of soda1 tsp ground cinnamon½ tsp ground ginger¼ tsp ground clovesFor the decoration75g/2¾oz unsalted butter, softened200g/7oz full fat cream cheese, at room temperature100g/3½oz icing sugar, siftedbrown fondant (optional) Recipe tipsMethodPreheat the oven to 180C/160C Fan/Gas 4.To make the pumpkin purée halve the pumpkin, scrape out the seeds and stringy bits with a spoon and discard. Place the pumpkin halves, cut side down, onto a baking tray and bake for 45 minutes, until it feels soft to the touch. Allow to cool, then scrape out the cooked flesh and mash with a fork until smooth. Set aside to cool.Grease and lightly flour a small bundt tin 21cm/8¼in in diameter.In a large mixing bowl, combine the brown sugar, pumpkin purée, cider and oil. Beat with a handheld electric mixer until thoroughly combined. Add the eggs, one at a time, beating until they are completely mixed in.In a separate bowl, sift together the flour, salt, baking powder, bicarbonate of soda and the spices. Beat this into the wet ingredients for 2-3 minutes until it is thick and smooth.Measure out half the batter into the prepared bundt tin (it should be about 550g/1lb 4oz of mixture). Bake for 30-35 minutes, until the top is springy to the touch and a wooden skewer inserted into the cake comes out clean.Allow the cake to cool in the tin for 5 minutes, then turn out onto a wire rack to cool completely. Wash, dry, and grease and flour your bundt tin again, and bake the other half.Meanwhile, make the cream cheese icing. Beat the softened butter in a bowl with a handheld electric mixer until it is light and fluffy. Add the cream cheese and beat until smooth. Gradually add the icing sugar and beat until well incorporated.When both cakes are completely cool, use a sharp knife to slice off a thin layer of the bottom of the cake to flatten it (reserve the cake trimmings). Place the 2 cakes, cut sides together, to see if it makes a convincing pumpkin shape. If necessary, trim off a little more so that the curves of the bundt tin line up with each other.Spread a little of the icing onto the bottom cake, then cover with the top cake layer. Use the reserved cake trimmings to fill in the hole in the middle of the cake. Spoon the icing onto the top of the cake and let it run down the sides. Create a fondant stem from the brown fondant, stick a toothpick in the end of the stem and secure it in the cake.Recipe TipsYou can bake this in a larger bundt tin in a single layer. Glass of beer 'makes people more sociable'Researchers from Switzerland have confirmed what most of us already know - drinking a single glass of beer can make people more sociable.The team from University Hospital in Basel tested 60 healthy people, with an equal number of men and women drinking alcoholic and non-alcoholic beer.They took part in a range of tasks, including a face recognition test, empathy test and sexual arousal test.The lead researcher said there had been little previous research in this area.Prof Matthias Liechti explained: "Although many people drink beer and know its effects through personal experience there is surprisingly little scientific data on its effects on the processing of emotional social information."The desire to be with others, in a happy, talkative and open environment increased in the group which drank the alcoholic beer and was more marked in women and those with higher initial inhibitions.As well as enabling the participants to recognise happy faces more quickly, the beer also enhanced participants' emotional empathy, particularly in those with lower levels of initial empathy.Participants were also shown pictures of explicit sexual content.After drinking non-alcoholic beer, participants rated them as less pleasant than neutral pictures - but they were rated as more pleasant by those who drank alcoholic beer. This was most marked in the women participants, but researches found it did not actually enhance sexual arousal.Earlier this year, the government revised the UK guidelines on drinking alcohol.The advice is now that men and women should drink no more than 14 units of alcohol a week - the equivalent of six pints of average strength beer or seven glasses of wine.They were revised due to the stronger evidence available that the risk of cancers, especially breast cancer, increases directly in line with consumption of alcohol.Conventional wisdomCommenting on the research, Prof Wim van den Brink, past chairman of the ECNP scientific programme committee, said: "This is an interesting study confirming conventional wisdom that alcohol is a social lubricant and that moderate use of alcohol makes people happier, more social and less inhibited when it comes to sexual engagement."The sex differences in the findings can either be explained by differences in blood alcohol concentration between males and females with the same alcohol intake, differences in tolerance due to differences in previous levels of alcohol consumption or by socio-cultural factors."He also pointed out that "alcohol-related emotions and cognitions as studied are not always consistent with actual behaviours".The study is being published in the journal Psychopharmacology and presented at the European College of Neuropsychopharmacology Congress Conference in Vienna.From BBC NewsAvailable from: http://www.bbc.com/news/health-37383682

A patriotic choice for any Fourth of July celebration or party!With summer in full swing, most of our weekends are filled up with birthday parties, visiting family and summer barbecues. If you guys have hung around here long enough, you know my favorite treat to make during the heat are icebox cakes. They are seriously so easy to make and perfect for making ahead the night before.This No Bake Mixed Berry Icebox Cake is just a slight variation of my Strawberry Cheesecake Icebox Cake which is a popular reader favorite.It’s got four berries instead of a triple berry mixture –> blackberries, blueberries, raspberries and strawberries which are all nestled in between whipped cream, cream cheese and graham crackers that soften into an airy cake-like texture as it rests in the fridge.It’s so light and refreshing and you can easily add in some chopped nuts, a drizzle of chocolate or whatever you have on hand!Ingredients3 1/2 cups freshly whipped cream, divided (or can use 3 1/2 cups of your favorite whipped topping like Cool Whip)one 8 ounce package cream cheese, softened to room temperature12 graham crackers2 1/2 cups mixture of fresh blackberries,blueberries, raspberries and hulled and sliced strawberries, divided leaving the prettiest slices for the topOptional Toppingscrushed graham cracker crumbschopped nutsdrizzle of chocolatepowdered sugar for dustingInstructionsReport this adTo make freshly whipped cream: With a hand mixer or in the bowl of a stand mixer, whip 2 cups of heavy cream until it just holds soft peaks. Add 1/3 cup of powdered sugar, 1/2 teaspoon of vanilla extract and whip to combine until stiff peaks hold. Do not overmix. Set aside 1/2 cup whipped cream for topping.In a separate large bowl, beat the cream cheese until smooth. Fold in the 3 cups of whipped cream or Cool Whip.Assemble the cake: Spread a thin layer of the cream mixture in a 8 x 8 pan to coat the bottom.Place 3 graham crackers across the center of pan and then break up 1 or 2 more crackers as needed to fill in the gaps. Spread half of the cream mixture on top. Place a single layer of mixed berries.Top with another layer of graham crackers, breaking them as needed to make them fit. Spread the remaining cream mixture over top. Add another layer of berries.Top with the final layer of graham crackers. Spread the reserved 1/2 cup freshly whipped cream (or Cool Whip) over evenly.Place the last layer of the prettiest mix of berries reserved for the top. Sprinkle on graham cracker crumbs on top.Refrigerate for at least 4 hours or overnight until the graham crackers have softened completely. Serve chilled and dust with powdered sugar if desired.Notes*To make this icebox cake in a 9x13 pan, increase the amounts by 1.5*You can replace cream cheese with prepared cheesecake pudding or vanilla pudding if desired..
